Caol Ila is derived from Gaelic Caol Ìle for "Sound of Islay" (lit. "Islay Strait"). The distillery was founded in 1846 by Hector Henderson, and is owned today by Diage.  Like other Islay whiskies, Caol Ila is often peated, though usually on the lighter side, pale in colour, with floral and peppery notes. 

Our fourth release is this undeclared Caol Ila was distilled in 2008 and bottled 2020, aged at least 10 years in a refill bourbon cask. This is a fruit-forward style of the distillery which we particularly love, featuring pineapple, coconut (maybe even Piña colada), honey-lemon and vanilla cream, with the peat dancing in the background (never aggressive), a full-bodied but gentle palate belying its 58.8% ABV, and a medium long finish with an interesting medicinal note reminiscent of a Laphroaig. As always, we bottle our drinks at cask strength with no coloring, additives or chill-filtration. Featuring artwork by world renowned pop artist, Charles Fazzino, this bottling is super special as it's a friendship joint bottling between us, Bar Mirai in Jakarta and Aloha Whisky in Tokyo. Only 122 bottles are produced in total.
